I recently got a little inspiration from my friends at Pacific Coast Producers to make a light, no-added sugar, California-themed Bellini made with unsweetened canned peaches from California. But I love using frozen peaches or fresh peaches when they are in season. It’s a virtual snap to put this together made with the goodness of peaches, which are just so naturally sweet and good! You can make this recipe completely Californian by swapping out the Prosecco for a nice, crisp California sparkling white wine.


I first had a Bellini in the famed place it originated: Venice, Italy at Harry’s Bar. It is made with Prosecco (sparkling Italian white wine) and pureed white peaches. I really fell hard for Italian Prosecco, and since I became acquainted with it, I always have some on hand, especially for light cocktails like this California Peach Bellini.

Description
Sip into summer with this refreshing California Peach Bellini recipe! Made with ripe peaches and sparkling wine, it’s the perfect easy cocktail for brunch or warm evenings.
- 2 cups peeled, chilled, sliced peaches (about 2 large peaches; may use frozen or canned, see below*)
- 1 (750-ml) bottle Prosecco or California sparkling white wine, chilled
- 6 fresh mint leaves
Instructions
- Place the peaches in a blender container and process until smooth to make a peach puree.
- Place 2 tablespoons peach puree in the bottom of a champagne glass.
- Slowly fill glass with sparkling wine (3-4 ounces), allowing for bubbles to dissipate.
- Garnish with a mint leaf. Makes 6 servings.
Notes
May use fresh ripe peeled peaches. Two large peaches provide about 2 cups sliced peaches. You may also use frozen sliced peaches, or chilled canned sliced peaches, draining liquid before blending.
